Indian food became popular throughout Australia during the 1960s and 1970s as more and more Australians travelled to India and fell in love with the spices and rich flavours of dishes like Lamb Korma and Mango chicken or Butter Chicken.
Each region of India has its own distinct cooking style and flavor. North India, in places like Punjab and Rajasthan, is known for Tandoori and Korma dishes. In the south, places like Andhra 'n' Kerala or Tamilnadu 'n' Karnataka , hot and spicy foods tend to dominate. The East specialises in chilli curries, the West is known for its use of coconut and seafood and the Central part of India is a melting pot of these different styles and techniques.
In Australia, most menus combine all of these techniques so that their menus are a wonderful mix of spicy, coconutty and rich flavours.
